Anise is an annual umbelliferous plant, growing wild inCrete, Syria, and other places of the East. It is cultivatedin some parts of France, Germany, and Spain, and may beraised also in England ; the seeds brought from Spain, whichare smaller than the others, are preferred.

Aniseeds have an aromatic smell, and a pleasant warmtaste, accompanied with a degree of sweetness. Water ex-tracts very little of their flavour; rectified spirit the whole.
